Peas with Shallots and Prosciutto

- 2 Tbsp olive oil or butter
- 2-3 shallots chopped
- 3 cloves garlic minced
- 1 lb bag of frozen peas
- 4 oz prosciutto sliced thinly
- 1/4 cup parsley minced
- 1/4 tsp salt
- 1/4 tsp pepper
- grated Parmesan cheese (optional but delicious)
Add oil to skillet over medium heat, then add shallots and garlic. Saute for 1-2 minutes.
Add proscuitto and cook another minute.
Add frozen peas and stir frequently, heating through for 5-7 minutes.
Remove skillet from heat and add in salt, pepper, grated parmesan cheese, and chopped parsley.
