These gooey s’mores rice krispie treats are such an easy and fun to make dessert. This version is actually baked for just a few minutes to get the marshmallows on top nice and toasty, and the chocolate bars melted, just like a campfire s’more!

As a kid, I loved rice krispie treats. Homemade, store-bought, from restaurants, you name it. But as an adultโฆ nah, who am I kidding, I still love them!
Thereโs just something absolutely irresistible combination of buttery marshmallow-y gooeyness, and crispy cereal in a portable no-bake dessert!
Another of my favorite desserts is s’mores. The crunchy graham crackers, the gloriously melted chocolate and gooey toasted marshmallows.. it’s one of the best campfire treats!
This recipe combines the two, so what you end up with is buttery rice krispie treats that are filled with crisp golden graham cereal, gooey melted chocolate, and of course extra toasted marshmallows on top.
What do I need to make this recipe?
- Butter – I like to use salted butter, but you can use unsalted if you prefer.
- Jumbo marshmallows – the jumbo ones are what’s melted into the butter, to create the “glue” that sticks all the cereal together.
- Vanilla extract – this enhances the other flavors, and I recommend using real vanilla, not imitation, as it doesn’t have the same flavor.
- Rice Krispie cereal – the classic cereal used in rice krispie treats.
- Golden Grahams cereal – this cereal mimics the graham cracker flavor that’s classic in s’mores.
- Mini marshmallows – these smaller ones are layered into the treats.
- Chocolate bars – Hershey bars are the classic chocolate used, and I like that you can break up the big bars into small chunks.
How to make s’mores rice krispie treats?
This is just an overview; the full ingredients and directions are in the recipe card toward the bottom of this post.
- Melt butter.ย I recommend a large pot for this, so you can stir everything in the pot and not have to dirty another bowl.
- Add marshmallows and melt.ย Make sure to do this over LOW heat, otherwise you might end up with hard krispie treats.
- Stir in cereal and marshmallows.ย This may take a little elbow grease, since everything is sticky, but itโs worth it in the end.
- Press into pan and bake.ย Do this lightly, so theyโre not super compacted. Baking doesn’t take long, just enough to soften the chocolate and toast the marshmallows.
Helpful Tip!
When making rice krispie treats, be sure to use fresh marshmallows. When marshmallows are old and hard, they have hardly any moisture left, and they wonโt melt nearly as well.
Variations of this recipe
- Butter – if you’d prefer to use unsalted butter, you certainly can. I would add a sprinkle of salt to the marshmallow mixture though.
- Graham crackers – I haven’t tested this recipe using crushed graham crackers (instead of the golden grahams), but I think it would work well.
- Shapes – feel free to cut these treats into any shapes youโd like! This is fun to do for seasonal holidays.
- Drizzled – for some extra fun and decadence, try drizzling the treats with melted chocolate.
- Extra toasty – if the oven didn’t get your marshmallows as toasted as you’d like, feel free to use use a kitchen torch (like you would use to make creme brulee). They’re pretty inexpensive and have a lot of uses!
FAQ’s
With all the gooey marshmallows, itโs no surprise that theyโre sticky. Iโve found the best way to avoid having half of the mixture sticking to your hands, is to spray your palms lightly with nonstick cooking spray before pressing the mixture into the pan.
Usually they are, and I have a great classic rice krispie treat recipe here on the site… but this version is baked. Baking the treats for just a few minutes will toast the marshmallows on top, and allow the chocolate bar pieces to get nice and gooey. This really mimics that classic s’mores flavor!
In general, it could be a number of things; not enough butter, too much cereal, not enough marshmallows, or heating the marshmallows at too high of a temperature. Most of the time though, the culprit is the heat. Heating the marshmallows over too high of a temperature can turn it into an almost toffee-like mixture, which will be very hard when cooled.
Making rice krispie treats ahead of time
Even though these treats donโt take long to make, and require very minimal baking, you can make them entirely ahead of time.
I donโt advise doing so more than 2-3 days ahead, or they can start to dry out.
Freezing
Did you know you can freeze rice krispie treats?
Let the treats cool completely, then wrap each square individually in wax paper, plastic wrap, foil, etc, and store in a freezer-safe container for up to 2-3 months.
Thaw (either at room temperature or in the refrigerator), and microwave for a few seconds to warm them up and get the marshmallows and chocolate nice and gooey.
Storage
Rice krispie treats should be stored in an airtight container at room temperature for 3-4 days.
To make them taste even fresher, wrap each individual square treat in plastic wrap and store in an airtight container at room temperature.
If you’d like them a bit gooey, heat up your treat in the microwave for a few seconds until warm!
My Favorite Rubber Spatula!
Iโve had a set just like this for years and theyโve held up really well! Rubber spatulas make stirring the cereal into the sticky marshmallow mixture a lot easier.

Ingredients
- 6 Tbsp salted butter
- 10 oz bag jumbo marshmallows
- 1 tsp vanilla extract
- 4 cups rice krispies cereal
- 2 cups golden grahams cereal
- 2 1/2 cups mini marshmallows divided
- 4 regular-sized Hershey chocolate bars broken up into small pieces
Instructions
Prepare
- Line an 8×8โ baking pan with foil or parchment paper, then spray lightly with nonstick cooking spray.ย Set aside.
- Preheat oven to 350ยฐF.
Melt butter and marshmallows
- Add butter to a large saucepan, then heat over MED heat.ย
- Once butter is melted, add the jumbo marshmallows.ย Reduce heat to LOW and stir until completely melted.
- Remove from the heat, then stir in vanilla extract.
Combine
- ** I find that lightly spraying a rubber spatula with nonstick spray helps with the cereal not clumping up too much on the spatula as you stir. **
- Add both the rice krispies cereal, and the golden grahams cereal, stirring until all the cereal is well coated.
Assemble
- Transfer half of the cereal mixture to the prepared baking pan.ย Spray your hands lightly with nonstick cooking spray, then gently press into the pan, until evenly spread out.
- **ย Try not to press too hard, or theyโll be so tightly compacted theyโll be hard to eat.ย You want to use the least amount of force necessary to spread them into the pan. **
- Top with half of the mini marshmallows and chocolate bar pieces. Repeat with the second half of the cereal mixture, mini marshmallows, and chocolate bar pieces.
Bake
- Bake in preheated oven for about 4-5 minutes, until the chocolate is starting to melt and the mini marshmallows are starting to get golden brown.
Serve
- Let the bars cool a bit, then slice into 9 squares and serve slightly warm.
