Yesterday was National Vanilla Cupcake Day…. omgoodness how did I not know this day existed before now? ย Alas, I didn’t have time yesterday to make any cupcakes, but I do have an amazing recipe to share with you. ย It starts with….drumroll please…. boxed cake mix. ย Yes, you read that correctly. ย Boxed cake mix. ย Hands down, it is the tastiest and most moist and soft cupcake I’ve ever made, and yet it holds up very well to buttercream frosting.
I know you may not be too crazy about boxed cake mix, but let me assure you… no one will know. ย I’ve made these countless times and have been told over and over again that they taste better than cupcakes from a professional bakery!

These look great! I am making about 150 cupcakes for an occasion. Have you tried making them and freezing them with out frosting, which I could do the day of????
The Chunky Chef says
Yes, they freeze and thaw out great!
Evelyn says
I was nervous to try because of the box cake. But they turned out perfect, moist and light. It worked perfectly.
Anita says
Hello! How many cupcakes does this recipe yield? Thank you ๐
The Chunky Chef says
Approximately 36 ๐
Oduuu says
I was wondering may I use butter instead of oil? And 4 eggs instead of 4 egg whites?
Amanda says
Iโve only tested this recipe as written. So without testing and retesting it myself, I can’t say for certain if that would work. Baking is very technical, so I find it best not to substitute when baking a recipe for the first time. If you try it, I’d love to know how it turns out!

Hi there! Iโm
Making these cupcakes for my sons bday. I was hoping to make them tonight and serve them tomorrow. Can they be stored out of the fridge until then? Thank you
The Chunky Chef says
Yes, they should be just fine at room temperature for a day or two ๐
Nikki says
Hi there,ย
Can I use this recipe to make a cake too? ย Going to be making a cake and cupcakes for the party! ย Iโm excited to bake and try these!
The Chunky Chef says
Yes you can make a regular cake with this batter ๐ I haven’t tested it to tell you the exact baking times… but I’d go by the instructions regarding baking time on the back of the cake mix box, and start checking for doneness around that time. You’ll want a toothpick inserted in the center to come out clean or with just a few moist crumbs.
Nikki says
Thank you! ย I did (2) 9โ round cake pans and put in oven for 35 minutes. ย Came out perfectly and Iโm making the icing now :). Smells wonderful, canโt wait to try tonight- then cupcakes tomorrow! ย
Willowโs Momma says
Did I read the frosting recipe right? Sour Cream? I love sour cream but Iโm making cupcakes for a nephews bday and I donโt have the time to mess up lol looking forward to trying your recipes!ย
The Chunky Chef says
You read it correctly! Sour cream is great to use in baking recipes, as it helps make it moist.
Sana Muqeem says
Hi I cam across this recipe and reay want to try. It’s really appealing.
However. Can you confirm the box mix size again? 1 oz is 28 grams unlike 18 you mentioned. 1oz is a v small box. I have a 19 oz box and don’t think I need to multiply it by 19!
The Chunky Chef says
Hi Sana ๐ There was an error with the recipe plugin, but I’ve fixed it. It should be an 18 – 19 oz box of cake mix.
Angela says
instead of white cake mix, have you used this recipe with other boxed cake mixes? Does the recipe need to be adjusted?
The Chunky Chef says
Hi Angela, I’ve never tried it with any other type of mix, so I can’t say for certain.
