Every now and then, I like to feel a bit girly and sip on something bubbly, sweet, and pretty. ย Like these Pear Pomegranate Bellinis!!
I mean just look how beautiful! ย I love the blush pink color with the little pops of red from the pomegranate arils.
I can’t take full credit for this recipe… I saw it in a Cooking Light magazine and just fell in love!! ย Can you imagine serving these at your next girl’s night, a bachelorette party, Valentine’s Day bash, or even just for you and your sweetie on a date night in?
This recipe uses Prosecco, which is usually a bit lighter and fizzier than champagne, but I think if you substituted champagne, it would still taste just as amazing.
I really like the use of Prosecco here, not only for the fruity notes, but also because of it’s price tag. ย A quality bottle of Prosecco will only cost about $12-15 here in Ohio!
This pear pomegranate Bellini recipe makes about 4 cups (so eight 1/2 cup servings), but is easily doubled if you’re serving a crowd.
There are tons of “hacks” online about how to seed a pomegranate, and honestly, some of them do work, but I usually prefer to just pick up a container of pomegranate arils from my grocery store. ย For just a few dollars, I get more seeds than I would get from one pomegranate, and none of the work!

Ingredients
- 5 oz pear brandy
- 3 oz pomegranate juice
- 1 bottle Prosecco (750ml) chilled
- 1/4 cup pomegranate arils plus some extra for serving
- 1 Anjou pear, thinly sliced plus some extra for garnishing
Instructions
- To a glass pitcher, add pear brandy and pomegranate juice and stir.
- Pour in prosecco, arils and pear slices and gently stir.
- To serve, add a sprinkle of pomegranate arils to bottom of a champagne flute, top with a few cubes of ice, pour in Bellini, garnish with a few slices of pear if desired.
