These aren’t the usual sloppy joes… made with beef, spicy chorizo, jalapeno and beer, they’re an adult version of everyone’s favorite childhood sandwich!
Once you try these sloppy joes, you’ll never want that canned stuff again! ย A few twists elevate this sandwich from regular to gourmet!
I love sloppy joes, of all kinds, so I’ve been on a mission for a while now to find one that would appeal to everyone’s tastes. ย My husband doesn’t like things sweet, at all, and traditional sloppy joes are too sweet for him. ย Well I finally found a recipe that works! ย It involves some spice, and some beer… right up my husband’s alley!
I’ve mentioned before that I’m a spiciness wimp… and to some degree I still am… but I think I’m building up my tolerance! ย Woohoo!! ย I find myself craving spicy foods now, where before I would shy away from them. ย So even to my semi-newbie palate, these aren’t all that spicy. ย There’s a hint of it, and the more you eat, the more that hint builds up… but it’s not light your mouth on fire hot, I promise you.
Granted, I garnished these with fresh jalapeno slices, which does make things spicy, but you could totally leave those off. ย Feel free to serve these sloppy joes up on your favorite buns as well, I just chose the pretzel buns because I had them on hand ๐ ย Plus, I’m pretty sure I have a complete obsession with pretzel buns… I mean look here and here for proof!
I also like to get crazy and make some loaded sloppy Joe fries! ย I took some crispy fries, added cheese on top and broiled them until the cheese was melted. ย Then I smothered them with a few big spoonfuls of sloppy Joe mixture and topped that with some cilantro and jalapeno. ย OMG you guys… it’s like heaven!! ย Try it this way, I know you’ll love it!
If you’re looking for a way to spice up your usual dinner routine, these sloppy joes are a great way to do it!

Ingredients
- 3/4 lb ground beef
- 3/4 lb ground chorizo
- 1/2 large white or yellow onion diced
- 1 jalalpeno seeded and diced
- 3 cloves garlic minced
- 3/4 cup beer I used Guinness Blonde
- 1 cup ketchup
- 1 Tbsp brown sugar
- 1 1/2 tsp chili powder
- 1/2 tsp dry mustard powder
- 1/4 tsp cayenne pepper
- Couple dashes of hot sauce
- salt and pepper to taste
- 1 Tbsp butter
- Olive oil
- Pretzel buns toasted, or your favorite buns
Instructions
- To a dutch oven or stockpot, add butter and a drizzle of olive oil and heat over MED-HIGH heat. Add beef and chorizo and brown, crumbling with a wooden spoon or potato masher.
- Drain meat mixture.
- Return meat to pot and add onion and jalapeno. Reduce heat to MED and saute for 2 minutes, until onion and jalapeno soften. Add garlic and saute another minute.
- Pour in beer and use wooden spoon to scrape bottom of the pan to deglaze. Let beer cook 30 seconds or so.
- Add ketchup, brown sugar, chili powder, mustard powder, red pepper, hot sauce and salt and pepper. Stir to combine well and bring to a bubble.
- Reduce heat to a simmer, cover and let simmer for 15-20 minutes.
- Add additional beer or water if mixture looks like it's reducing too quickly.
- Serve over toasted buns or crispy french fries.

I worked with what I had on hand: 16oz ground beef, 12oz chorizo, a Cerveza, Cholula, I was out of cayenne and brown sugar but I added some smoked paprika, dumped the entire beer in, and it came out DELICIOUS!
we’re definitely making this again, I’m putting it on a baked potato! Thank you for a great recipe!

Weโre not Guinness drinkers. Could an IPA work? Or what would you suggest other than Guinness? Hubby really doesnโt like it and I donโt drink. Thank you!
The Chunky Chef says
I’ve not tested this with an IPA, but a good replacement for the Guinness blonde would be a lager or amber beer ๐
DeanaG says
If one cannot get Guiness Blonde, would any blonde beer work here?
The Chunky Chef says
Yes, just use your favorite ๐
Dale C Walker says
what kind of Chorizo do you use?
The Chunky Chef says
My store only carries Cacique and Johnsonville, and they’re both excellent in this recipe ๐

Soooooo yummy! Put it on pretzel buns. Next time over fries! I used half the amount of chili powder as I didn’t want it too spicy and it was perfect
Amy says
You just gave me a great idea! I have a ton of potatoes to use up!! Thanks so much!
SHANA CHAMBERS says
Dee-licious!! I couldn’t really taste the beer part but the chorizo and ground beef? The Denver Broncos just sign 505 Chile as the “go to” food for mile high stadium….green Chile fries…etc. THIS needs to be the “go to” for Coors Field (Monfort BEEF??) or something…comfort beef?? Chorizo??
I made it as sloppy Joes but the fries?? Scrumptious!!

Oh man I LOVE this. I agree that homemade sloppy joes are much better. I haven’t had the canned variety since I was a little girl but I’ve been making my own for a few years now and love it. I never thought to try a chorizo one but they sound amazing!
