I absolutely LOVE Mexican food, and whenever we go out, I’m usually craving some chicken fajitas. That enticingly smokey aroma that wafts through the whole restaurant as the waiter carries out your sizzling platter of delisciousness…. *drools*. These oven baked chicken fajitas are ahhhh-mazing and ridiculously simple!
Slice up your veggies, and slice your chicken into similar sized strips.
Toss your veggies and chicken into a 9×13″ pan, sprinkle with your spice mixture, drizzle with vegetable oil and toss to combine everything really well. Don’t use a kitchen utensil for this one, use your best 2 tools you have… your hands 🙂 Go on, get messy, it’s fun and does the job quickly 😉
Now just put them in a 400 degree oven for 35-40 minutes, stirring once halfway through.
Ding!! Your fajitas are finished!
Top with your favorite condiments and salsa 🙂

Found Treasure from Amanda @My Adventures in Dinner Time. Here’s a great weeknight healthy dinner idea. You can pop the fajitas in the oven and get a workout in while it cooks.

This looks delicious. I’m one of those people who doesn’t care for avocado, but I’m always willing to try it both ways before I make up my mind. Happy FF, and have a wonderful weekend. 🙂
MyAdventuresInDinnerTime says
Thank you very much 🙂 For as much as I love avocado, I should live somewhere that I could grow my own lol. In this dish they’re more of a buttery texture element… but I know avocados aren’t beloved by all 🙂

This looks delicious! I love that they are done in the oven. I dislike the splatter you get when cooking it on the stove top.
MyAdventuresInDinnerTime says
Thank you!! I agree, it’s a hassle on the stove top, plus you’re standing there babysitting them. This way you just pop em in and go enjoy your family or whatever you’d like, while they’re cooking away 🙂 The flavor was surprisingly great!!

That’s how my next on gets cooked!

Awesome!!

mmmm Chipotle’s corn salsa!
MyAdventuresInDinnerTime says
It was pretty darn close, and you don’t have to worry about it being super light your tongue on fire hot like it is sometimes from there!
